Three kinds of memory
Finger memory is what most students rely on — the hands just know where to go. It works right up until nerves interrupt it, and then there's nothing to fall back on.
Add ear memory (you can sing or hum the piece from memory) and map memory (you know the structure: intro, verse, the tricky bar, the ending). With all three, a slip becomes a small stumble rather than a full stop.
Practise starting from the middle
Pick five points in the piece and practise starting cleanly from each one. If you can only start at the beginning, one mistake sends you back to the beginning. Being able to restart anywhere is what makes a performance feel safe.
